Gluten Free Menu Swap - November 19th

Thanksgiving is almost here! We’re about to sit down to a pre-Thanksgiving dinner trial run. Gluten Free Southern Cornbread Dressing, Gluten Free Gravy, Gluten free Green Bean & Corn Casserole, Gluten Free Cranberry Orange Relish, and Gluten Free Pan-Fried Tofu.
For those of you who are about to have your first Gluten Free Thanksgiving, I want you to know that it is possible to have a great Gluten Free Thanksgiving. I cooked all of this, with no sous chef, in 2.5 hours. Not something I’d do every day, but definitely doable for Thanksgiving =)
We’ll be heading to the farm on Wednesday to celebrate Thanksgiving with my parents and my mom’s family. At last count there are 8 kids + spouses, 26 grandchildren (my generation), and 5 great-grandchildren (two of the great-grands are less than 2 weeks old!). Not everyone will make it, but it will be a fun gathering.
My menu for the week is, I hope, realistic. It’s definitely subject to change since my main goal for the week is to be fully present and enjoying every moment. I’m not trying any new recipes; it will just be some of our favorites.

This week’s menu:
Monday:Falafel on Flat Bread with Creamy Cilantro Sauce
Tuesday: something easy; probably Fried Brown Rice - I’ll be making packing lists, doing laundry and writing posts =)
Wednesday: Black Bean Burgers topped w/ Pimento Cheese; Curried Sweet Potato Fries
Thursday:Toasted Tofu (Turkey) Sandwich With Cranberry Sauce & Arugula
Friday:Sweet Potato & Black Bean Enchiladas
Saturday: something with quinoa
Sunday: something with tempeh

Mommy Brag: These days “feeding David” means sitting back and watching him clown around with his colorful spoons. Most of the food gets into his mouth, but every now and then we have to be quick and grab a bowl on its way to the carpet =)
