A Gluten Free Ginger Cake Recipe (in a mug)

A chocolate mug cake recipe is awesome, but this ginger flavored twist is even better. For those who prefer a less sweet version of the traditional cake, ginger offers a more sophisticated taste experience.

One of my dear readers took the Gluten Free Chocolate Cake in a Mug recipe that I posted several weeks ago and created a Gluten Free Ginger Cake in a Mug recipe. How awesome is that? I have to say that it’s a good thing that my microwave in non-operational or our 30 day Primal Experiment would definitely be in jeopardy. For all of you who’ve no interest completely cutting out the gluten free sweets, here is the recipe (many thanks to Karla)!

Instructions

Ingredients

  • 6 Tablespoons Mary Frances’ AP Gluten Free All Purpose Flour mix
  • 1/8 tsp xantham gum
  • 3 Tablespoons sugar
  • 1 Tablespoon brown sugar
  • 1 Egg
  • 3 Tablespoons plain low fat greek yogurt
  • 3 Tablespoons oil
  • 1/2 teaspoon vanilla
  • 1 to 2 teaspoons ground ginger
  • 1 Coffee Mug
  1. Mix flour, xanthan gum, ginger and sugar.
  2. Spoon in 1 egg.
  3. Pour in milk and oil, and mix well.
  4. Put in microwave for 3 minutes on maximum power (1000watt).
  5. Wait until it stops rising and sets in the mug.
  6. Tip contents out of mug onto saucer and enjoy!
