Gluten Free Bread 101

There is no question that one of the foods that people most want to cook when they go gluten free is bread. I get dozens of emails each week with questions about gluten free bread, and my sandwich bread recipe gets about 20,000 hits each month. That’s a lot of people who want to learn to cook GF bread!

For all of us who are gluten free, it can be tricky to keep bread on hand. You might be able to get gluten free bread at the store (emphasis on might), but that gets expensive quickly, and let’s face it, a lot of store-bought GF bread just isn’t that good.

What if you could make great tasting gluten free bread in your own kitchen? What if you had a recipe that worked every single time? And that your whole family enjoyed eating? Wouldn’t that be pretty awesome?

I should have written to you long before now and thanks you for being a life saver. Without your bread and flour mix I would have died of malnutrition long before now. I am a seventy-eight year old retired engineer that was diagnosed with celiac three years ago. Most of the foods that I loved were now off the menu and all the bread that I could find was like trying to eat a hockey puck. Then a friend told me about your web site and life changed for the better. ~Schuble

Get The Bread Recipe I Use In My Own Home

I spent more than 3 years coming up with the sandwich bread recipe I use now, and it is delicious. In fact, it’s so good that I’ve started using the same recipe to make other breads – I’ve made dinner rolls from the recipe, hamburger buns, and even foot-long sub sandwich buns.

Despite the fact that the recipe is available on my blog, I still get a lot of questions from readers who want more help with making the bread. Some people make the bread and love the taste, for their other food allergies, but don’t know how to get started.

To help everyone who has questions about baking gluten free bread, I’ve made an online cooking class that’s all about the basics of baking gluten free bread. Gluten Free Bread 101 is now available to everyone as a single course – you don’t have to sign up for a quarterly membership to the Cooking School.

Gluten Free Bread That Tastes Good:

OMG!! This recipe rocks!! I’m SO glad I found this site. I’ve been missing sandwiches so bad that I broke down and ate one with regular bread. BIG mistake. So I found this recipe and finally got all the ingrediants. I’d already eaten dinner, so I had a piece with some cinnamon sugar on it and my mouth was in heaven. Thanks, thanks, thanks! ~Barb

Flours You Can Find and Afford:

Gluten free bread mixes and flours are so expensive. When I created this recipe I wanted to use the most inexpensive flours and the flours that were the most commonly available. Two of the flours are available at most grocery stores (even rural ones!) and the other two flours are two of the least expensive gluten free free flours and they are readily available online or in most grocery stores in larger cities.

More Praise From People Just Like You:

Here’s some feedback that I’ve gotten from my students:

I have tried many gluten free mixes and a few of the frozen gluten free breads – NONE compare to the bread I make from your sandwich bread recipe. I try to make 2 loaves every other weekend. It is so good and freezes very well..
— Mary

I tried your bread recipe tonight. Just mixed like you said, used the electric mixer for 4 minutes (total prep time 7 minutes), popped the dough into oiled bread pans, let rise for 30 minutes on the back of the warm stove, baked for 50 minutes. IT WAS WONDERFUL! DELIGHTFUL! FLUFFY! FRAGRANT! SMOOTH!

Even the gluten lovers praised it and went for thirds. My daughter loves it also. Was totally blown away by how quick and easy it will be to make her own wonderful bread. Thank you so much. You are the Bread Goddess in our home. — Meadow

3 How-To Articles:

In addition to the three recipes, I’ve written three jam-packed articles on baking gluten free bread that will help you learn exactly how to get great results every time.

1. The first article is the basics – what you need to know before you start baking. There is information here that you won’t have read anywhere else.

2. The second article covers ingredient substitutions for baking bread. If you have to avoid more than just gluten, such as corn, rice, dairy, sugar, etc, this article will help you out as you bake and cook.

3. The third article contains the 10 most frequently asked questions that I receive from my readers about GF bread. If you’ve ever wondered what sort of bread machine to get, how to keep your bread from falling, or how to keep your bread from being gritty or hard as a brick, this article is for you.

Cooking Demonstration

Most importantly, the online class include a nearly 20 minute long video where I walk you step-by-step through baking a loaf of bread. You can see the exact ingredients I use, watch me mix it up, see the consistency of the dough, and gaze at the finished product!

Bread recipes are temperamental and it takes practice to learn what gluten free bread dough should look like. If you’ve not baked hundreds of loaves of gluten free bread, then it’s hard to know if you’re doing it right until 20 minutes after the loaf is out of the oven. But, by watching this video, you’ll be able to see what the dough should look like and make adjustments accordingly so that you don’t waste your expensive ingredients.
