The Slacker’s Guide To A Gluten Free Thanksgiving: The Day Before!!

The Wednesday Before Thanksgiving: It’s the next to last day and preparations kick into high—gear today. If you have the day off from work, you can get a lot of work done today so that you can relax and enjoy your guests on Thanksgiving. If you don’t have the day off, recruit all the helpers that you can for tonight and Thanksgiving morning. After all, cooking together as a family is part of the fun of big feasts.

Today’s Assignments: First thiggs first! Get that turkey into the brine. Second, if you’re making yeast rolls, go ahead and make your dough using active-dry yeast, and then place the entire bowl of dough, covered with plastic wrap, into the refrigerator to rise until Thanksgiving morning. You can also go ahead with any of the following:

  1. make condensed soups that will go into casseroles tomorrow
  2. make cranberry sauce
  3. make any salads that will be fine if they’re refrigerated for 24 hours
  4. thaw any frozen vegetables that you’ve pre-prepped for the stuffing and casseroles
