Today’s guest post is from a reader, Bizzybee, who sent me these recipes way back in 2008. I just found them again when I was going through my old draft posts, and I decided that it was high time to get these published. This recipes will particularly interest those of you who like to use pre-packaged bread mixes, because the base is The Gluten-Free Pantry Favorite Sandwich Bread Mix
Today I’m sending some variations of bread I make using a pre-packaged Gluten Free Bread Mix from THE GLUTEN-FREE PANTRY. The history of my Scarborough Fair Herb & Onion Bread goes back to pre-gluten free. My dad used to make a wonderful Herb & Onion Bread. One evening I wanted something quick and easy and different so I used a pack of refrigerated biscuits- mixed them all up in a bowl with some Dill Weed, Chopped Onion, Parsley, Rosemary, Thyme and then put them in greased muffin tins to bake. They were great hot or cold. From then on that’s the only way my family wanted them. Since going on the Gluten-Free Diet I’ve adapted a bread-machine mix using the same ingredients.
Add the liquid ingredients to the machine’s loaf pan and stir. Then add the dry ingredients except for the yeast. Make a small dip in the center of the dry ingredients and pour the yeast into that. Set your machine to the appropriate settings for a 2 lb loaf and bake away.

Place half of the cheese and pepperoni on top of that, and then add the remainder of the bread mix. Top the bread mix with the last half of the pepperoni and cheese. Make a small dip in the center of the dry ingredients and pour the yeast into that. Set your machine to the appropriate settings for a 2 lb loaf and bake away.
