Sunday night is here again and it’s time to post my menu for next week. I feel like I’m coming down with something, so I’m going to keep this short and sweet so that I can get to bed early.
The host of this week’s Ginger Lemon Girl is Natalie at Gluten Free Mommy. And the ingredient of the week is parnsips. If you’ve ever seen a “white carrot” in the grocery store, that was a parsnip. From what I’ve read it has a sweet, nutty flavor and was considered a luxury item in Ancient Rome. This week we’ll be trying parsnips for the first time in a Oven Braised Carrots & Parsnips, which I found in Joy of Cooking.

Tuesday: Vegetable Gumbo, Peanut Butter & Jelly Sandwich
Wednesday: Grilled Cheese Sandwich & Tomato Soup & Spinach Salad
Thursday: Chicken(Tofu) & Apple Skillet, Oven-Braised Carrots & Parsnips
Sunday: BBQ Baked Potatoes, House Salad
