Gluten Free Menu Monday

Natalie over at Gluten Free Mommy has started a Gluten Free Menu Swap. Every Monday, gluten free bloggers can post their menu for the week and Natalie (or whoever is hosting for the week) will do a roundup of all of the gluten free menus. If you’d like to participate next week, the optional special ingredient is basil, and you can find all of the details here.

Without further ado, here is my gluten free menu for this week:

Monday: Fat Free Vegan’s Favorite Lasagna
Update:This was really, really good! I made it with gluten free rice lasagna noodles and substituted collard greens for the spinach. You’d never guess that it was vegan, if no one told you.

Tuesday: Tofu Rachel Sandwich & Butternut Squash Soup
Update: A Rachel is the sister sandwich to the Reuben – instead of sauerkraut you top your sandwich with cole slaw. We ended up having TLTs (Tofu, Lettuce, Tomato) and Rachels that night, and we really enjoyed both. P.S. Someone remind me to post a recipe for baked tofu soon – it is addictive!

Wednesday: Fried Brown Rice
Yummy as usual. We never have leftovers with this one!

Thursday: Tofu Scallopini with Orange Balsamic Sauce over Rice
This was my first attempt to make one of our favorite pre-vegetarian suppers into a vegetarian/casein free supper. The flavor was great, but the sauce still needs a bit of tweaking before I post it here. If you’d like to volunteer to test the meat version of this, let me know in the comments.

Friday: Eggplant Parmigiana Pizza
This turned into eggplant parmigiana calzones since John had been wanting calzones for several weeks. John thought the meal was excellent and wished we had more leftovers. I think that I’ll add the “cheese” filling from Fat Free Vegan’s Favorite Lasagna next time I make these.

Saturday: Sweet Potato Peanut Stew
Oh my gosh, this was soooo good. Sweet Potato Peanut stew my favorite fall/winter recipe and I was so excited to have it again. The recipe is huge so we’ve had it for lunch twice this week and still have some in the freezer.

Sunday: Eggplant Lentil Casserole
I never got around to making this because we ran out of eggplant. It will probably show up on the menu again as soon as I find more good eggplants at the store. We checked them out Friday evening but the Western’s eggplants were a bit overripe.

Since Natalie has been posting pictures of her boys on Mondays, I couldn’t resist including this picture of David =)
