Gluten Free Menu Swap - May 5th

I’m so happy! I’m finally planning our menu for the first time in months and I’m really excited about trying some new recipes. My inspiration for this week’s menu is the cookbook Beans by Eliza Green. We bought this cookbook before we switched to a vegetarian diet because we knew we need to learn how to cook beans. I haven’t used the cookbook all that much because the recipes tend to be complicated, but I think that I’ve picked out some that are doable.

Saturday: Tofu, Lettuce & Tomato Sandwiches with Fried Onion Rings (yum!)

Sunday: Spring Greens Ravioli with Creamy White Bean Sauce*

Monday: Hummus and Avocado Sandwiches with a side of Creamed Spinach

Tuesday: Faki (Greek Lentil Soup)* with a Greek Salad

Wednesday: Curry Noodle Salad with Sugar Snap Peas and Peanuts*

Thursday: Chickpea Caesar Salad with Fried Green Tomatoes

Friday: Pizza: Spinach, Mozzarella, Olives, Fresh Tomatoes

Saturday: Spinach Enchiladas and Southwest Black Bean Salad with Baked Spiced Goat Cheese*
