Yum! I think that I may add some cornbread dressing to mine next week. Or use toasted slices of leftover dressing for the bread...oh the possibilities =)

This looks so good that I'm tempted to make it RIGHT NOW. haha. I love the idea of cranberry sauce on a sandwich with pan fried tofu, mmm... I don't have arugala either, just spinach...

About where you can get Nutritional yeast- any health food store will carry it in the supplement section in a large tin. Just ask, and check the label to make sure it's gluten free. Kals and Whole Foods have gluten free nutritional yeast. You can also buy it in bulk at some health food stores but of course the location and way it is dispensed makes a big difference as far as CC. I wouldn't expect a mainstream store to carry it. :)

Enjoy!

Carrie,
I buy nutritional yeast from Bob's Red Mill. I usually throw it in with one of my orders of 25 lbs. of brown rice flour =) Adding the nutritional yeast to the flour dredge really makes it taste like my grandmother's fried chicken!

Maddy, I think spinach leaves will work great. They have a strong enough taste to not be overpowered by the cranberry sauce. And I"m in complete agreement regarding the orange. I always add orange juice and orange zest to my cranberry sauce =)

It will have to be baby spinach leaves for me as that's all I have handy, there again I'll have to have a quick trip to Trader Joes to get the cranberry sauce [the one with orange is the best]
Cheers

Mary Frances,
Where have you found the nutritional yeast? I haven't been able to find it in any grocery stores here. I've been interested in using it too! I still keep meaning to try that sandwich bread also! It looks so soft and tasty!!! This is a great sandwich idea! Wonderful for leftovers! Thanks girl!
