i know what you mean about polishing off the sweets.
the way i found out i had to limit my oat consumption was when i made 5 dozen oatmeal cookies and ate them all myself in a week.
when i ate four every other day, no problem.

problem here is, i love peanut butter cookies and havent had them since going gf so i just may have to try them and take my chances. would you happen to know if they freeze well? that might be my only protection. they sound pretty darn good!

Great Idea! For an everyday peanutbutter cookie recipe, the following can't be beat!

1 cup peanutbutter (not the Natural type!)
1 cup sugar
1 egg
1 tsp vanilla

Cream all together, make into 1 TBS balls, mash gently with fork to flatten. Bake at 350 for 15-18 minutes (watch them!) Makes 24.
Super-Duper!!
