I made this tonight. I mixed up putting the veggies in before the milk & egg mixture, but it still turned out really yummy. It didn't set up like a typical quiche, but that was okay. It was delicious!

Michelle,
Please let us know how the baking turns out! By the way, the hashbrown idea is great! I'll give that a try next time I convince John that we should have quiche again =)

Great looking recipe! Great site. I just finished mixing up your flour mix and can't wait to try. I've tried everything out there to get a decent loaf of bread.
In despiration for a "crust" substitute, I have used fresh or frozen hash brown style potatoes. Just put some oil in a pan - making sure to get the sides, then spread the hash browns around the bottom and up the sides a bit. When the edges start to brown, layer in your other ingredients and put in the oven. Bake accordingly. Nice and crispy!

Gluten Free Mama,
I'm glad you liked the potato-slices idea. I thought it turned out really well. I'd love to try your recipes when you have them ready. I know what you mean about having recipes in your head. I've had a white potato/sweet potato potato salad recipe brewing in my own head for a couple of months now, but I'm not quite ready to try it yet =)

Hi, I love the suggestion for using potato slices for a crust! It has sparked a few ideas for recipes that I have in my head just waiting to get out. After the heat settles down I will try them and send them your way if they turn out. Thank you for sharing! The quiche looks beautiful, can't wait to try it out! The Gluten Free Mama
