Mary Frances - am grateful for your blog - was having a hard time figuring out how to do rice a different way! Buying the mix was getting expensive and I didn't have any control over the ingredients. Thanks for the quick easy lesson!
p.s. Here in Maine fiddleheads are a season item (early spring) and are eaten sauteed, boiled and pickled! If getting fresh ones make sure you remove the papery skin if it hasn't already been done. They are an immature fern and have a yummy "green" taste.

Carrie, I'm so glad to be back! It feels like life is right again. I can't wait to see what variation you put on the risotto.

Kate, fiddlehead ferns?? Where in the world do you get them and what do they taste like?

Amy, I'll definitely have to try the microwave version on this brown rice. It took over an hour to cook on the stove top, when the arborio rice usually only takes about 30.

Jennifer, I hope you like the risotto. Let me know how it goes =)

Sheltie Girl, I'll have to give some other rices a try. We've pretty much stuck with long-grain brown and whites to this point, but I saw some really neat varieties at Target tonight and would love to give them a try.

This is a wonderful post Mary Francis. I'm glad you're able to get back to posting regularly.

We eat more rice now we're GF. I tend to really vary it up though and buy a lot of different varieties as they all taste so different.

Thank you for the step by step, picture by picture, directions. Rice or beans are our current staple and it is refreshing to learn, try, and eat something different.

Have a blessed day.

We love risotto, and yes we definitely eat more now that Anna is gluten free. We use the microwave cooking directions in The Microwave Gourmet cookbook though. We have been wondering if it tastes better on the stove (but we love it so much, can't imagine it being better :). Anyway, we might have to give this a try.

Thanks,
Amy B

Seriously, Mary Frances. How many times do you and I cook the same meal a week? LOL I just made risotto with fresh, wild fiddlehead ferns for dinner. :)
