Glad to see there are lots of different recipes to try here. I am really DESPERATE for school meals since our school is CLUELESS on what it means to be Gluten Free… We are trying to find options our son can actually eat in the lunch room, BUT it’s turning out to be way more stress than it’s worth.

So I have made GF Ding Dongs, Hot pockets, chicken nuggets…
My son told me my chicken nuggets were as good as Chic fil A.. MAJOR compliment from a chic fil a fan….

He isnt a major bread fan so I also do lunch meat rollups with Buddig lunchmeat and Rice Shreds or Veggie Shreds for the cheese….

anyone have any fave school recipes you could share that are quick and easy? My son doesnt really care for PB, Mac n cheese, etc.

Isn’t it funny how much food you can put together from your pantry, freezer, and fridge when you don’t want to or really can’t afford to spend any on food? I’m always surprised what I can put together when I really need to.
