		<description>Yup, no worries. Cornmeal will make excellent polenta. No stress, just follow the directions on the package and it should be fine. If you want it to be really firm, spread the prepared corn mush into a pan and leave it alone to cool for a few hours.

And you can use anything- parchment paper, saran wrap, aluminum foil, or even thick  gallon sized ziploc bags- for an cooling surface.

It's so weird; I'm usually so confident in the kitchen, but I'm almost scared of polenta now after several failed attempts. I'm going to be calling you and See if this doesn't work =)</description>

		<description>Sea, I wandered Whole Foods forever tonight and couldn't find any polenta or wax paper. I'm hoping that cornmeal and saran wrap will work okay for the polenta. I'm realizing I'm still a bit gunshy to try it again.  

As for the Tofu/Cranberry/Arugula sandwich - I can definitely post on that. I got the idea from Simply Recipes, but Elise didn't post a recipe and she used turkey, so I guess I'm in the clear to actually post a recipe.</description>
