Gluten Free Menu Swap- January 7th

Sunday night is here again and it’s time to post my menu for next week. I feel like I’m coming down with something, so I’m going to keep this short and sweet so that I can get to bed early.
The host of this week’s Gluten Free Menu Swap is Natalie at Gluten Free Mommy. And the ingredient of the week is parnsips. If you’ve ever seen a “white carrot” in the grocery store, that was a parsnip. From what I’ve read it has a sweet, nutty flavor and was considered a luxury item in Ancient Rome. This week we’ll be trying parsnips for the first time in a Oven Braised Carrots & Parsnips, which I found in Joy of Cooking.

Gluten Free Menu: January 7th - 13th
Monday: Sweet & Sour Chicken (Tofu), Roasted Brussel Sprouts
Tuesday: Vegetable Gumbo, Peanut Butter & Jelly Sandwich
Wednesday: Grilled Cheese Sandwich & Tomato Soup & Spinach Salad
Thursday: Chicken(Tofu) & Apple Skillet, Oven-Braised Carrots & Parsnips
Friday: Polenta with Balsamic Tofu & Roasted Broccoli
Saturday: Spinach & Mushroom Lasagna
Sunday: BBQ Baked Potatoes, House Salad

We’re having brussel sprouts?
I’m usually pretty enthusiastic about retrying foods that I disliked as a child, but I may have to draw the line here.
Post thelasagna! Do you use a pesto or a marinara sauce in that lasagna recipe?
hmm…well I haven’t actually made up the recipe for the lasagna yet. I was thinking a marinara sauce. It will probably depend on what I find in the freezer. I think there may be more tomatoes than basil.
That may be why I didn’t show you the menu before I posted it =) But to be fair, I could put rutabegas on the menu for next week. I hated those as a child =)
Sounds good. Hope you like the roast parsnips, it’s a favorate in my household but it is a veg that you tend to love or hate in my experience.
For those of you wondering, John agreed that the Brussels sprouts were better than he expected, but he still only at a couple. I thought they were pretty good, but would have liked them to be a bit crisper.
I looooove grilled cheese and tomato soup! Your menu looks delish!
