Some Sundays it is very comforting to know that I won’t have to figure out what we’re having for supper on my drive home from work every day. December has been a very tiring month so far, and I want this week to be easy. So even though Gluten Free Menu Swap is on hiatus until January, I’m still going to post my menu. It’s just so nice to be able to call John, ask what’s for supper, have him pull up the menu, and then remind me what I’d already planned.
Monday: Foccacia, Green Salad, Nana’s Texas Spaghetti
Tuesday: Tomato Soup and Grilled Cheese & Pesto Sandwiches
Wednesday:Sweet Potato & Peanut Stew
Thursday: Homemade Veggie Sushi; Miso Soup
Friday: Gluten Free Veggie Pizza, Green Salad
Saturday: Spicy Vegetarian Chili, Jalepeno & Cheddar Cornbread (inspired by Gluten Free Gobsmacked)
Sunday: Sweet & Sour Tofu Best Ever Chinese Broccoli Mushroom Recipe both from Book of Yum.

Your menu for Monday calls for foccacia — is this foccacia bread? If so, do you make it yourself or buy it? Is it possible to buy gluten-free foccacia?

It is foccacia bread! I make it myself from a recipe in Carol Fenster’s Gluten Free 101. The only changes that I make are to use my Gluten Free Flour Mix. I haven’t seen any gluten free foccacia in stores yet, but it’s not difficult to make at home.
