Gluten Free Chocolate Cake In A Mug Recipe

Warning! If you read this post, you will learn how to make gluten free chocolate cake in 5 minutes. If it is not in your best interest to be perpetually 5 minutes away from chocolate cake, then stop reading now. You’ve been warned!

Okay, now for the fun stuff. Diana G. just emailed me to let me know that she’d made gluten free chocolate cake in a mug in her microwave using my gluten free flour mix. She was also kind enough to send the recipe and pictures, so I wanted to post it to the blog before it got lost in my email.

Hi Mary,
I made a 5-minute chocolate cake in a mug (using a microwave) the other day that turned out beautifully. I used the original recipe, substituting the wheat flour with your AP flour and 1/2 tsp. xantham gum. I was pleasantly surprised when it turned out to be exactly like it did when I used wheat flour, with the only difference being it was GF. It’s dangerous, though, because chocolate cake is only 5 minutes away at any time of day or night. 🙂 Diana

This is the recipe I used that turned out and tasted perfectly.

  • 4 Tablespoons Mary Frances’ AP GF flour mix
  • 1/2 tsp xantham gum
  • 4 Tablespoons sugar
  • 2 Tablespoons cocoa
  • 1 Egg
  • 3 Tablespoons milk
  • 3 Tablespoons oil
  • 1 Coffee Mug

Instructions

  1. Mix flour, sugar and cocoa:
  2. Spoon in 1 egg
  3. Pour in milk and oil, and mix well
  4. Put in microwave for 3 minutes on maximum power (1000watt)
  5. Wait until it stops rising and sets in the mug (It won’t overflow, eventhough it looks like it might)
  6. Tip contents out of mug onto saucer and enjoy!
  7. It says it makes enough for two, but it was enough for just me! LOL

  1. Thanks so much for sharing this recipe. We made one for everyone in the house last night and they were delicious. We added in chocolate chips and coconut to make them even richer.

  2. This is really good cake. However, I don’t always want chocolate so I made a few changes and made a ginger cake.

    changes:
    6 tbsp gf flour (b/c you are omitting the cocoa you need to increase the flour)
    only 1/8 tsp of gum (did the same in the recipe above)
    3 tbsp sugar
    1 tbsp succanate or brown sugar

    additions:
    1/2 tsp vanilla (also added above too)
    1 to 2 tsp ginger (to your taste)

    I also did not have any milk so instead of the milk I used plain low fat greek yogurt – 3 tbsp (no sugar in the yogurt)!!

    It was very yummy!!

  3. Made these this evening with my 11 year old son with some modifications. As we are in the UK I used Dove’s Farm self raising gluten free flour and omitted the xantham gum as this flour already has it. I added more cocoa, and 1/2 teaspoon of vanilla extract. I also added half a crushed banana and reduced the sugar. The resulting cake was light, moist and so delicious!!! Infact it rivals my non gluten free chocolate cake definitely one recipe I will be making over and over again 🙂 I’m thinking Sunday brunch with some freshly picked strawberries and clotted cream!!!

    Oh my. Chocolate cake in 5 minutes – dangerous! The day I got this recipe in the mail, my daughter brought home fresh raspberries she had picked herself, so of course we had to have chocolate cake with raspberries and whipping cream. Our first try was a bit disappointing, it was more like a bland steamed pudding than a cake. Our next try we modified slightly: eliminated the xanthan gum, reduced the oil to 1 T, added 1/2 tsp double acting baking powder (I am in Canada), 1/2 tsp salt and 1/2 tsp vanilla, added 3 T plain greek yogurt. We always use soy milk for our gluten free baking. Baked it in my microwave for 4 minutes. It was light, had a moist crumb but not at all crumbly, and the yogurt added a nice depth to the flavour profile.
    I have now put the recipe away or I will be as big as a barn in a week! This is definitely a keeper recipe. Thanks for sharing it.

  5. Just came home for a week vacation in cottages that only have stove tops and a microwave. We needed dessert. With 11 gluten free / dairy free vacationers, we made chocolate cake in a coffee mugs. Big success. Even the non-gluten free people enjoyed the cake.
