@Rose: if you search for tortillas on my site (there's a search box at the top of the page) you should find a recipe for GF flour tortillas. And check www.glutenfreegobsmacked.com for a great flat bread/wrap recipe

WOW! Mary Frances, I decided to make these tonight instead of my spicey peanut noodles and tofu (which are great, but ya know!) OH MY GOSH! Despite the fact that I was SO tired when I got home from work, these were SO worth making!!! I think I'm gonna make the falafel's ahead of time next time and keep them in the freezer (kinda like meatballs) I made Michael a meatball sub with pizza sauce and frozen meatballs, but boy was he missing out (that's okay, there's more falafel and cucumber dill sauce for me tomorrow! YAY!! haha! Anyways, I just wanted you to know that I LOVED these! And I made Kate's sandwich wrap bread to wrap them with! YUM-O! Oh so worth it!! Thanks again, I had never made anything like these before! OH won't I be making them again now!!

Carrie, gyros are exactly where we got this idea and it is really really good. Definitely try Kate's bread. It's so easy to make and we love that it only cooks for 15 mintues.

Kate...I LOVE falafel too. I was so sad to get home from work yesterday and find that they had all been eaten in my absence. Who knew that 22 falafel balls would go so quickly with only two adults and a toddler =)
